棋肉是芽庄山区出产的特殊沉香品种，外观与色泽与红土香接近，但味道清凉，有西瓜香味，具有极强的穿透力。近二十几年来出现的沉香品种，与红土香有明显的差别，质地坚密。因其味道特殊，而较红土香有更多“肉”材，所以刚出现在台湾香界时被命名为棋肉，后便约定俗成了。虽然棋肉产在芽庄，但它应该是一个独立优秀的沉香品种，在形体与香味上都有特征可以被区分。
